But for the home cook, it’s harder to get right and brains are not something you want to undercook. Harris warns against pan-frying unblanched brains as “undercooked brain is revolting”. It might sound rich but is a good match for sultry weather. Cookery writer Simon Hopkinson showed me how to make this dish, in what turned out to be a masterclass in the gentle touch needed to peel off the membranes and then prepare and cook the brains.
